I have a task to create a dynamic page (PHP or Javascript) that shows:
Number of tweets with specific hash tag
Number of tweets that came from specific country!!
most popular hash-tags for specific country
does anybody have any idea of how to get such stats or part of them??

No. Twitter releases its statistics after a certain period of time. There's no definitive/official API for that. But there are a lot of third-party applications that offer that.

In order to count Tweets in real-time, you will need to use the Twitter Streaming APIs, in particular the statuses/filter endpoint. Using the track parameter with the hashtag you are interested in, you will receive matching Tweets in real-time.
In order to get started, you will need to create credentials for your Twitter app on https://apps.twitter.com/, then consume the API from your favorite language. The fastest way is to use an existing library which will handle the authentication and the connection to the Twitter API for you.
If you want to use Go, I definitely recommend twittergo by #kurrik which supports the Streaming APIs. For other languages, you can take a look at this page on Twitter Libraries.
You can also use tweepy a python API to access twitter APIS . But first you should have twitter streaming API access for that you should have an account at apps.twitter.com
You will always need to create an app on the Twitter Developer portal https://apps.twitter.com/ as this is where you get to manage your API OAuth keys. As Romain says, the best option here would be to use the Streaming API.

No. You can not get all tweets. This is called the firehose and costs several million dollars a year. Twitter only sells that to a few partners.
I'm trying to get some information for a application we would like to develop for our business. We run a chain of stores (approximately 20) and would like to give our customers reward points when they check-in to our store location. We would also like to display that information our company site eg. "Client X has checked in Location Y". I was wondering if anyone can point me to any API(s) or solutions that may be able to achieve something along these lines? I was looking at the foursquare API, is this a viable option? or is there any other recommendations?

As Fahri pointed you can use 4sq API, but nowadays all socials integrate geolocation. You can share your position also using Facebook and Twitter. I will suggest to use the last two, because they has integrated authentication, and API since iOS6, probably they are also more used than 4SQ.
I want to use Twitter's Streaming API to collect all of the tweets of users signed onto my website - of course I would have an oauth token and secret for them, but I want to store their tweets as they make them. Is that possible with the Streaming API? If so, can anyone point me to some PHP library that will help me implement such a task? I tried looking in to Phirehose, but I don't understand how to use that library to get the feeds of all the users signed up on my website. Any help would be greatly appreciated.

I guarantee you're not going to find one "class" that does all that for you.
Manually checking your site's rank on Alexa is probably going to be your best source of information on top of what Google Analytics is already giving you.
Google Analytics does NOT require any sort of API.
The site you linked to asks for your Google username/password. I'm flagging this question. I encourage others to do the same.
