There are numerous other methods you can benefit from the DateTime class.
You can use the DateTime object to do this in procedural style PHP like this:

Valid modify() formats are explained in Date and Time Formats.
Please note that various strtotime() examples are not correct in date/time difference calculation. The simplest example is difference between 2013-03-31 21:00 and 2013-03-30 21:00. Which for naked eye is exact 1 day difference, but if you do subtract this 2 dates, you will get 82800 seconds which is 0.95833333333333 days. This is because of the time change from winter to summer time. DateTime handles leap years and time-zones properly.

I have a string in the format YYYYMMDDHH24MISS that is year, month, day, hours, minutes, seconds. I want to convert this to a date, add one day to it and return it in the same format. Sounds simple but I am unable to get this to work. I have tried a number of different ways where $field3 contains the date string for example:

The format of your input string can be parsed by the constructor of class DateTime (and date_create() and strtotime()) without problems.

You can, as well, format the date as string using the format YmdHis to get the modified date in the same format as the input string.

You should be using DateTime for working with dates. It's timezone friendly.

strtotime() converts the date into a unix timestamp which is the number of seconds since January 1st 1970. If you want a date output you have to run the finished timestamp through date() first.
$capturedDate = '2008-06-20';
$endDate = strtotime($capturedDate.' +1 day');
echo date("Y-m-d", $endDate);
strtotime creates a Unix timestamp so if you want to be presented with a formatted date, you need to pass the timestamp as an argument to the date function as follows:
$capturedDate = '2008-06-20';
$endDate = strtotime($capturedDate);
$endDate2 = strtotime('+1 day',$endDate);
echo date('Y-m-d', $endDate2);
Additionally, there are a wide variety of parameters you can use in the date function if you want to display additional information.

Your code is redundant. Why format a timestamp as a string, then convert that string back to a timestamp?
Try

PHP version >= 5.4 I'm afraid, but you should be using at least that version by now anyway.
Pakistan, which is the localisation explicitly set, uses "DD-MM-YYYY" format dates so the problem occurs when you cast the date into a string of "MM-DD-YYYY". This American format of date is not parseable by the Pakistan localisation.
If you still want to keep the round-trip to a string and back, use DD-MM-YYYY or the ISO datetime format.
While this is the only (current) answer which actually explains your original issue, I recommend the code be refactored as others have demonstrated.
I'm really stuck with adding X minutes to a datetime, after doing lots of google'ing and PHP manual reading, I don't seem to be getting anywhere.
The date time format I have is:
2011-11-17 05:05: year-month-day hour:minute
Minutes to add will just be a number between 0 and 59
I would like the output to be the same as the input format with the minutes added.
Could someone give me a working code example, as my attempts don't seem to be getting me anywhere?

The ISO 8601 standard for duration is a string in the form of P{y}Y{m1}M{d}DT{h}H{m2}M{s}S where the {*} parts are replaced by a number value indicating how long the duration is.
For example, P1Y2DT5S means 1 year, 2 days, and 5 seconds.
In the example above, we are providing PT5M (or 5 minutes) to the DateInterval constructor.
PHP's DateTime class has a useful modify method which takes in easy-to-understand text.
$dateTime = new DateTime('2011-11-17 05:05');
$dateTime->modify('+5 minutes');
You could also use string interpolation or concatenation to parameterize it:
$dateTime = new DateTime('2011-11-17 05:05');
$minutesToAdd = 5;
$dateTime->modify("+{$minutesToAdd} minutes");
$newtimestamp = strtotime('2011-11-17 05:05 + 16 minute');
echo date('Y-m-d H:i:s', $newtimestamp);

I don't know why the approach set as solution didn't work for me.
So I'm posting here what worked for me in hope it can help anybody:

As noted by Brad and Nemoden in their answers above, strtotime() is a great function. Personally, I found the standard DateTime Object to be overly complicated for many use cases. I just wanted to add 5 minutes to the current time, for example.
I wrote a function that returns a date as a string with some optional parameters:
1.) time:String | ex: "+5 minutes" (default = current time)
2.) format:String | ex: "Y-m-d H:i:s" (default = "Y-m-d H:i:s O")
Obviously, this is not a fully featured method. Just a quick and simple function for modifying/formatting the current date.

I am in need of an easy way to convert a date time stamp to UTC (from whatever timezone the server is in) HOPEFULLY without using any libraries.
Use strtotime to generate a timestamp from the given string (interpreted as local time) and use gmdate to get it as a formatted UTC date back.
Example
As requested, here’s a simple example:
echo gmdate('d.m.Y H:i', strtotime('2012-06-28 23:55'));
Using DateTime:

If you have a date in this format YYYY-MM-HH dd:mm:ss,
you can actually trick php by adding a UTC at the end of your "datetime string" and use strtotime to convert it.
date_default_timezone_set('Europe/Stockholm');
print date('Y-m-d H:i:s',strtotime("2009-01-01 12:00"." UTC"))."\n";
print date('Y-m-d H:i:s',strtotime("2009-06-01 12:00"." UTC"))."\n";
This will print this:

And as you can see it takes care of the daylight savings time problem as well.
A little strange way to solve it.... :)

If you don't mind using PHP's DateTime class, which has been available since PHP 5.2.0, then there are several scenarios that might fit your situation:
If you have a $givenDt DateTime object that you want to convert to UTC then this will convert it to UTC:
$givenDt->setTimezone(new DateTimeZone('UTC'));
If you need the original $givenDt later, you might alternatively want to clone the given DateTime object before conversion of the cloned object:
$utcDt = clone $givenDt;
$utcDt->setTimezone(new DateTimeZone('UTC'));
If you only have a datetime string, e.g. $givenStr = '2018-12-17 10:47:12', then you first create a datetime object, and then convert it. Note this assumes that $givenStr is in PHP's configured timezone.
