I have a simple question, with maybe not so simple of an answer. I want to be able to set a variable in one script and pass that value and variable to another script. Without passing it through the url, and having the ability to pass an array.
So I have index.php in there I have a variable

Is this possible? I am sorry for the amateurish question, but I am very green when it comes to php.

you can set it in the $_SESSION variable:
<?php
session_start();
$_SESSION["myVar"] = "blabla";
....
Of course you can store an array() in this variable too.
Just pass that information in the querystring. Then you can access it via $_GET. If it doesn't exist, just set the value to an empty string or whatever default value you want it to have.

You can use sessions, POST data, GET data, cookies and database data.
I use PHP for almost one year, but I encounter a problem that confuse me for few days. As we know that we can use Ajax to pass variable to PHP then get response back for display. But how can I get the variable from one block of code to anther? Well Let me describe my problem in the code. Because my code has a very large size, so I just put a simplify version here.

Your AJAX calls to the page each initialise a new set of variables. You can't access $arrray from consecutive calls, but you could access a session variable.
Add session_start(); at the top of the page, then

Note: this snippet is making assumptions about the order of execution that might not be justified. For production code you should test the presence of $_POST and $_SESSION variables before you use them.
Okey so I can't quite see how to do this but this is what I am trying to do. I need to update a SESSION that is used on multiply places on the website. I do this with ajax but when I change the SESSION it remains the same in the website as before the ajax call. here is an example:

Now, the sessions are used al over the site so I can't just replace the information from the ajax call in the example div with a innerHTML=data.responseText; at just that place. Anyway when I do this teh echo of the foo and bar sessions don't change, are they just static variables that can't be changed without a page reload or what is the problem?
As far as I understand, you open index.php and example div contains default values of session variables ('foo bar' in your example). After you click Update Session, doing innerHTML=data.responseText you can see updated session values ('new foo new bar' according to example). But after you reload index.php - it shows 'foo bar' again. According to your code, you do not check if you should set default session variables. Try to replace in your index.php

Updated code will check if session variable is set (user open index.php at the first time). Once it is not set - default values will be assigned, but once that is done, it will not override any future changes (so, after ajax call foo and bar variables will be set and your code will not rewrite its values)
How would I for example, take a url with some $_GET data, for example http://www.website.com/something?food=steak
How would I then output steak? My current situation is that I'm trying to use the Header function to redirect to a page where I have it so that if $_GET["duplicate"] is equal to 1, then echo this, else, echo nothing. But its not taking the $_GET data I can tell I did a var_dump($_GET);

It's just a variable, treat it like one:
echo $_GET['food'];
Everything after question mark is available in form of global array $_GET.
$a=$_GET["food"];
echo $a;
also
if url has ?food=steak&color=red;
$a=$_GET["food"];
$b=$_GET["color"];
more than one is possible. Also search for $_POST.
Alright, so I figured my issue out. I have a $_GET variable that gets the end of the page and declares it as "p" for page. I need to do the following to get it to work.
?p=createuser&duplicate=1
I have to show a page from my php script based on certain conditions. I have an if condition and am doing an "include" if the condition is satisfied.
if(condition here){
include "myFile.php?id='$someVar'";
}
Now the problem is the server has a file "myFile.php" but I want to make a call to this file with an argument (id) and the value of "id" will change with each call.
Can someone please tell me how to achieve this?

Imagine the include as what it is: A copy & paste of the contents of the included PHP file which will then be interpreted. There is no scope change at all, so you can still access $someVar in the included file directly (even though you might consider a class based structure where you pass $someVar as a parameter or refer to a few global variables).
You could do something like this to achieve the effect you are after:
$_GET['id']=$somevar;
include('myFile.php');
However, it sounds like you are using this include like some kind of function call (you mention calling it repeatedly with different arguments).
In this case, why not turn it into a regular function, included once and called multiple times?
An include is just like a code insertion. You get in your included code the exact same variables you have in your base code. So you can do this in your main file :

The simplest way to do this is like this
index.php

You can share variables since you are including 2 files by using "include"
In the file you include, wrap the html in a function.

<?php echo $myVar; ?>
</div>
<?php } ?>
In the file where you want it to be included, include the file and then call the function with the parameters you want.
I know this has been a while, however, Iam wondering whether the best way to handle this would be to utilize the be session variable(s)

I have ran into this when doing ajax forms where I include multiple field sets. Taking for example an employment application. I start out with one professional reference set and I have a button that says "Add More". This does an ajax call with a $count parameter to include the input set again (name, contact, phone.. etc) This works fine on first page call as I do something like:

I also have other dynamic includes like this throughout the site that pass parameters. The problem happens when the user presses submit and there is a form error. So now to not duplicate code to include those extra field sets that where dynamically included, i created a function that will setup the include with the appropriate GET params.

The function checks for query params, and automatically adds them to the $_GET variable. This has worked pretty good for my use cases.

If anyone else is on this question, when using include('somepath.php'); and that file contains a function, the var must be declared there as well. The inclusion of $var=$var; won't always work. Try running these:

Your question is not very clear, but if you want to include the php file (add the source of that page to yours), you just have to do following :
