My goal is to subtract the current date from the stored date, and compared them to a saved interval value by the user.
I am running into the following error trying to use redact.

For some reason the $subtract is causing this error. Why is the presence of subtract causing: "this object is already an operation expression'?
$new Date() is not valid here. You want MongoDate or MongoDB\BSON\UTCDateTime appropriate to your driver instead.

The interpolation of the Date value actually happens in the "client" and "before" the aggregation pipeline is actually sent to the server. So you get the "milliseconds" as of "now" and send as a "BSON Date".
Note that this is "millseconds" in difference from the two BSON dates, so your "interval" needs to be in milliseconds, or otherwise do the math to convert further.

Each "day_id" would be in it's own $or argument:

That is how $or conditions work as a "list" of possible expressions.
The JSON syntax is clearer to visualise:

Since there is a very clear distinction between a "list" and an "object" definition. $or conditions are "lists" of "objects", and that means you list the full condition just as if it were a query in itself. Since this is not called within an $elemMatch.
And of course the "DELETE" part is the .remove() method:

After quite some trying out and web research I go crazy with this query. I want to build a query for 'Clubs' around a geo point (distance max 500 meters) in php on MongoDB.
But when I run query it ignores the distance limit and shows all clubs in database BUT sorted by distance.

Anyone know why the results are not limited to the specified maxDistance?

Also it is probably helpful if you'd test the query in mongo shell without using the PHP APIs first (just to see if the query is generally working and append '.explain()' to it to see what generally happens inside DB).
I'm trying to get my head around the complex find conditions of CakePHP and have read the docs but am struggling with this one query.

While the conditions in the question are not that complex, they touch on a few points which mean they can be tricky to define correctly. Some of the things to know when defining cakephp conditions:
Conditions are defined as an array of key => value pairs, as such the same key cannot be defined twice on the same level
an array element which has a numeric key is interpreted as an sql expression
The default join mode is "AND" - it's not necessary to specify "AND" => ... in conditions
An OR conditions must have more than one elements. There's no error if it has only one but otherwise: OR what?
Bearing in mind the above notes, the conditions in the question can be expressed as:

The issue you're seeing is a bug in MongoDB, which I've reported in SERVER-9289. A work-around for this entails wrapping the argument to the date operator in an array, as in the following shell example:

It should be trivial to port that over to PHP.
Having said that, your original code does have a bug in the reference to $executed. Per the $project documentation, you can refer to fields in the BSON document by name (or a dotted path to a field within objects/arrays), but there is no support for invoking JavaScript methods on those fields. Along those lines, the aggregation pipeline is operating on the raw BSON documents, so those types are never translated into their JavaScript representations over the course of the pipeline (e.g. the BSON date never becomes an ISODate).
Thankfully, calling $executed.getTime() should not even be necessary with MongoDB 2.4. SERVER-6239 improved support for BSON date handling in $add and $subtract. You can see that ticket for more details, such as the expected result for subtracting two dates, or adding a date and a number.

I have a bunch of companies that has a status of 0 as default but sometimes get a higher status. Now i want to use the high status if exists but revert to 0 if not. i have tried a bunch of different approaches but i always get either only the ones with status 0 or the ones with the status i want, never giving me status if exists and 0 if not.

I changed the name for the models for this question just to make more sense, people are generaly frighten away when i tell them i work with cakephp for my flex application. I guess the logic to this question doesn't make sense but trust me that it makes sense in my application.

I'm not sure to have understood what results you expect. If you want to retrieve all records having status = 0, plus let's say the one having status = 3, you could use an 'IN' instead of an 'OR'.
In Cake, you would write it like this:
