Server that I am posting data to requires header that includes
Content-Type: application/json
I have a PHP code to set this header (edit)

tested also moving HTTPHEADER to beginning
When I check my request headers I get this
[content_type] => application/json;charset=utf-8
How do I remove charset from header? (or prevent php/server adding it?)

I am trying to post a bunch of domains to the godaddy api in order to get information about pricing and availability. However, whenever I try to use curl to execute this request, I am returned nothing. I double checked my key credentials and everything seems to be right on that end. I'm pretty confident the issue is in formatting the postfield, I just don't know how to do that... Thank you to whoever can help in advance!

There are two problems in your code:
Media type of sent data must be application/json (by default this is application/x-www-form-urlencoded), and your PHP app must accept application/json as well:

Post fields must be specified as JSON. To achieve this, use the json_encode function:

Your are overwriting the header with the second set of the options. I would build up the header array like so:
$headers = array();
$headers[] = "Accept: application/json";
$headers[] = "authorization: Bearer " . $yourAPItoken;
$headers[] = 'Content-Type: application/x-www-form-urlencoded; charset=utf-8';
And send the array:
curl_setopt($ch, CURLOPT_HTTPHEADER, $headers);

However if I trap the header info actually sent in the CURL request the output is as follows:

Can anyone explain why CURL has modified the Accept and Content-Type parameters?

What you want is defined by CURLOPT_HTTPHEADER instead of CURLOPT_HEADER.
From PHP Docs:
CURLOPT_HEADER TRUE to include the header in the output.
CURLOPT_HTTPHEADER An array of HTTP header fields to set, in the format array('Content-type: text/plain', 'Content-length: 100')
See this user note about using it.
You used curl_setopt($ch, CURLOPT_POST, true); which sets the content-type. Instead use curl_setopt($ch, CURLOPT_CUSTOMREQUEST, "POST"); (see http://php.net/manual/en/function.curl-setopt.php).

You've missed some crucial configurations.
These are the set the CURL to send request using POST, and the second is data to send. (RAW DATA is being sent as string into POSTFIELDS, those if you send array - it will automatically append header "multipart/form-data"

Since you are doing a POST request you need to tell Curl to do that as well:

Does Curl auto-detect the type of data we Post, and auto-count the string length?
Or should we always specify Both?
Or does it largely depend on the destination's rules and expectations?

I read http://us1.php.net/curl_setopt, but haven't noticed any details on defaulted content-type parameters.
If you do not specify anything about Content-type but use the CURLOPT_POSTFIELDS then the header is always Content-type: application/x-www-form-urlencoded as default. Also it sets the Content-length: automatically.
For this reason, when we post JSON content through the POST we need to override the content-type through HTTPHEADER option. It is similar to XML or any other specific type of content.
